Sauté 1 chopped onion and 1 chopped bell pepper in a little butter until softened
Mix with 3 cups cooked, shredded chicken
Stir in 1 can cream of chicken soup, 1 can cream of mushroom soup, and 1 can diced tomatoes with green chiles
Cut 10 to 12 corn tortillas into pieces
Layer the tortillas, chicken mixture, and shredded cheddar cheese in a baking dish
Repeat the layers and finish with cheese on top
Bake at 350°F for 30 to 35 minutes, until hot and bubbling
Let rest for a few minutes before serving

On Saturday, September 26, GroovFest '26 brings a little nostalgia to Tomball Depot Plaza with live music, vintage vehicles, local vendors, festival food, and plenty of retro fun. The free event runs from 11:00 AM to 5:00 PM, making it an easy way to spend a fall afternoon close to home.
For an evening out in Houston, Mrs. Doubtfire: The Musical comes to the Hobby Center from October 13 through October 25. Based on the beloved film, the musical brings the familiar comedy to the stage with plenty of music, humor, and heart.
